=== Pharmacodynamics === Benorterone is an antiandrogen, or an antagonist of the androgen receptor (AR), the biological target of the androgen sex hormones testosterone and dihydrotestosterone. In one study, the affinity of benorterone for the AR was found to be about 5-fold greater than that of cyproterone acetate in rat prostate cytosol; the Ki values were 0.7 nM for benorterone and 3.7 nM for cyproterone acetate, which were 243% and 46% of those of testosterone (Ki = 1.7 nM), respectively. However, another study found that benorterone had only 11% of the affinity of dihydrotestosterone for the androgen receptor. Although an antiandrogen, benorterone actually is a very weak partial agonist of the AR and has been reported to possess weak androgenic activity. The same is true for cyproterone acetate and other steroidal antiandrogens. Unlike certain other steroidal antiandrogens such as cyproterone acetate, benorterone is not also a progestogen, instead being described as a selective and pure AR antagonist similarly to nonsteroidal antiandrogens such as flutamide and bicalutamide. However, although it is described as not being a progestogen, benorterone was found to produce "a highly variable decrease in plasma testosterone levels," indicating that it has weak antigonadotropic effects. The reasons for this are unclear, as other pure antiandrogens such as cyproterone (not cyproterone acetate) and flutamide do not do this and instead produce consistent increases in testosterone levels.
=== Microbial === Some molds such as Rhizomucor miehei are able to produce proteolytic enzymes. These molds are produced in a fermenter and then specially concentrated and purified to avoid contamination with unpleasant byproducts of the mold growth. The traditional view is that these coagulants result in bitterness and low yield in cheese, especially when aged for a long time. In modern times, microbial coagulants have improved greatly, largely due to the characterization and purification of secondary enzymes responsible for bitter peptide formation/non-specific proteolytic breakdown in cheese aged for long periods. Consequently, it has become possible to produce several high-quality cheeses with microbial rennet. ==== 1998 congressional campaign ==== In 1998, Yates opted to forgo reelection, and Pritzker ran in the Democratic primary to succeed him, reconstituting his campaign committee in April 1997. Also running in the primary were state representative Jan Schakowsky and state senator Howard W. Carroll. The district covered the northern lakefront of Chicago, as well as the suburbs of Evanston and Skokie. It had a large Jewish electorate and had long been regarded as the "Jewish seat" in Illinois's congressional delegation. Yates was Jewish, as were all three Democratic contenders to succeed him. The district had been described as being among the most liberal in the country. Journalist James Ylisela Jr. observed that Pritzker, Schakowsky, and Carroll largely all ran on platforms aligned with the "liberal Democratic Party agenda" that Yates had championed. But the Chicago Tribune wrote that Pritzker and Carroll ran on more moderate platforms than Schakowsky, and therefore potentially wound up competing with each other for many of the same voters. At the time, the election was one of the most expensive congressional primaries in U.S. history, and Pritzker spent nearly $1 million of his own money on his campaign. This included $500,000 on television ads in the Chicago market. He finished third among five candidates in the Democratic primary, with 20.5% of the vote to Schakowsky's 45.1% and Carroll's 34.4%. Schakowsky went on to represent the district for 28 years, retiring after the 2026 election.

In the mid-1930s, Pauling, strongly influenced by the biologically oriented funding priorities of the Rockefeller Foundation's Warren Weaver, decided to strike out into new areas of interest. Although Pauling's early interest had focused almost exclusively on inorganic molecular structures, he had occasionally thought about molecules of biological importance, in part because of Caltech's growing strength in biology. Pauling interacted with such great biologists as Thomas Hunt Morgan, Theodosius Dobzhanski, Calvin Bridges and Alfred Sturtevant. His early work in this area included studies of the structure of hemoglobin with his student Charles D. Coryell. He demonstrated that the hemoglobin molecule changes structure when it gains or loses an oxygen molecule. As a result of this observation, he decided to conduct a more thorough study of protein structure in general. He returned to his earlier use of X-ray diffraction analysis. But protein structures were far less amenable to this technique than the crystalline minerals of his former work. The best X-ray pictures of proteins in the 1930s had been made by the British crystallographer William Astbury, but when Pauling tried, in 1937, to account for Astbury's observations quantum mechanically, he could not. It took eleven years for Pauling to explain the problem: his mathematical analysis was correct, but Astbury's pictures were taken in such a way that the protein molecules were tilted from their expected positions.

=== Southeast Asia === Soybeans were mentioned as kadêlê (modern Indonesian term: kedelai) in an old Javanese manuscript, Serat Sri Tanjung, which dates to 12th- to 13th-century Java. By the 13th century, the soybean had arrived and cultivated in Indonesia; it probably arrived much earlier however, carried by traders or merchants from Southern China. The earliest known reference to it as "tempeh" appeared in 1815 in the Serat Centhini manuscript.
